Ingredients

  • 140 g Unsalted butter
  • 55 g Cocoa Powder
  • 200 g Sugar
  • 2 Eggs
  • 65 g All-purpose flour
  • 1 tsp Vanilla
  • ¼ tsp Salt

Method

  1. Preheat oven to 175°C. Line a 20 cm square baking pan.
  2. Melt butter in a saucepan, then remove from heat.
  3. Whisk cocoa powder into the hot butter until smooth; cool for 5 minutes.
  4. In a separate bowl, whisk eggs, sugar and vanilla for 2 minutes until glossy.
  5. Fold the cocoa-butter mixture into the egg mixture.
  6. Sift in flour and salt; fold just until combined — do not overmix.
  7. Spread in the pan and bake 22–25 minutes, until a tester has moist crumbs.
  8. Cool completely before cutting.

Recipe note

Do not overmix. Do not overbake. The center should still look slightly underdone when you pull it from the oven.
